Ingredients:
2 Eggs
30g of Coconut Flour
¼ tsp. of Cayenne Pepper
¼ tsp. of Salt
¼ tsp. of Paprika
45g of Panko Breadcrumbs
30g of Shredded Coconut
500g of Shrimp – Deveined, Tails On
Coconut Oil
Directions:
Add in the eggs to a medium sized mixing bowl and whisk them together. Set it aside.
Add in the coconut flour, salt, paprika, and the cayenne pepper. Set it aside.
Add in the crumbs and the shredded coconut to a medium sized bowl. Put it aside.
Pick the shrimp up by the tail and dip them in the flour mix.
Dip them in the egg bowl, drip the egg-drenched shrimp in the coconut mix. Make sure it is coated well.
Repeat the process until all of your shrimp are covered.
Add 3 Tbsp. of coconut oil in a medium sized pan. Allow it to heat up for 3 minutes on medium low heat.
Transfer the shrimp to the pan, working in batches. Cook them for 2 minutes on each side.
Move the shrimp to a plate that is lined with a paper towel.
