Serves 4
6 slices bacon
4 cups fresh broccoli, chopped
1/4 cup mayo
3 tablespoons Thai chili sauce
2 tablespoons pepitas
1.Press the Sauté button and add bacon to Instant Pot®. Cook bacon until crisp.
2.When bacon is cooked, remove and place on paper towel until cool. Add broccoli into bacon grease and stir-fry for 3 minutes until just beginning to soften. Press the Cancel button.
3.Remove broccoli and place in large bowl to set aside. In small bowl, mix mayo and chili sauce. Add sauce mixture to large bowl. Crumble bacon over bowl and toss. Sprinkle pepitas on top to serve. Serve warm or cold. WHAT ARE PEPITAS? Pepitas are pumpkin seeds. They’re generally smaller and flatter than seeds you might find in a pie pumpkin. The seeds you find inside carving pumpkins have a shell on them, so you usually can’t see the darker colored pepita inside.
