Serves 3
6 eggs
1 cup water
1/4 cup mayo
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon yellow mustard
1/4 teaspoon paprika
1. Place eggs on steamer basket and add to Instant Pot®. Pour water into pot and click lid closed. Press the Egg button and adjust time for 8 minutes.
2.When timer beeps, quick-release the pressure and remove steamer basket. Place eggs in cold water and peel when cooled. Slice eggs in half lengthwise.
3. Remove yolks and set egg whites aside. Place yolks, mayo, salt, pepper, and mustard in food processor and blend until smooth. (Alternatively, press with fork until all ingredients are smooth.) Place filling into egg whites. Sprinkle with paprika and refrigerate at least 30 minutes or until chilled.
