Baked Scallops

Serves: 1 
Preparation Time:  30 minutes

 Ingredients:
 Bay scallops (90g) 
Oats (1 tablespoon, old-fashioned)
 Olive oil (1 ½ teaspoons, extra-virgin) 
Lemon pepper
 Garbanzo beans (50g, low salt) 
Cucumber (150g) 
White wine (3 tablespoons) 
Cheddar cheese (15g, low fat, shredded)
 Lemon juice (3 tablespoons, freshly squeezed) 
Romaine lettuce (230g, chopped) 
Tomato (1) 

Directions:

  1.  Put scallops into a container and cover with white wine; cover container and put into refrigerator overnight. 
  2. Set oven to 350°F/180°C. 
  3. Remove scallops from wine and top with oats and cheese.
  4.  Place onto a baking tray and bake for 10 minutes.
  5.  Combine lemon pepper, lemon juice and oil in a small bowl.
  6.  Mix together garbanzo beans, cucumber, lettuce and tomato. Serve salad topped with lemon dressing and baked scallops.
