Ingredients:
1 Spaghetti Squash
2 Tbsp. of Butter
2 Tbsp. of Olive Oil
4 Cloves of Garlic – Minced
1 Shallot – Chopped
A Handful of Parsley – Minced
25 g of Parmesan Cheese – Shredded
Dash of Salt
Dash of Pepper
Directions:
- Preheat your oven to 400°F/200°C.
- Cut the squash lengthwise in half. Scoop out the seeds and throw them away.
- Put the squash cut side facing down on parchment paper lined baking sheet pan.
- Drizzle it with the olive oil and season it with the salt and the pepper.
- Bake it for 60 minutes. Allow them to cook for 10 minutes.
- Sauté the shallots and the garlic in a pan for 5 minutes.
- Add in the garlic and the shallots.
- Add the butter and the parsley.
- Scoop out the spaghetti strands form the squash with a fork. Add it to the pan.
- Cook it for 1-2 minutes.
- Remove it from the heat and add the grated cheese.
- Garnish it with more parsley and Parmesan cheese.
