Parmesan Spaghetti Squash

 Ingredients: 
1 Spaghetti Squash
 2 Tbsp. of Butter 
2 Tbsp. of Olive Oil
 4 Cloves of Garlic – Minced
 1 Shallot – Chopped 
A Handful of Parsley – Minced 
25 g of Parmesan Cheese – Shredded 
Dash of Salt 
Dash of Pepper 

Directions: 

  1. Preheat your oven to 400°F/200°C.
  2.  Cut the squash lengthwise in half. Scoop out the seeds and throw them away.
  3.  Put the squash cut side facing down on parchment paper lined baking sheet pan.
  4.  Drizzle it with the olive oil and season it with the salt and the pepper.
  5.  Bake it for 60 minutes. Allow them to cook for 10 minutes.
  6.  Sauté the shallots and the garlic in a pan for 5 minutes. 
  7. Add in the garlic and the shallots.
  8.  Add the butter and the parsley.
  9.  Scoop out the spaghetti strands form the squash with a fork. Add it to the pan. 
  10. Cook it for 1-2 minutes. 
  11. Remove it from the heat and add the grated cheese.
  12.  Garnish it with more parsley and Parmesan cheese.
