Orzo and Spiced Shrimp

 Serves: 2 
Preparation Time:  40 minutes
 Ingredients :
 Orzo pasta (150g) 
Olive oil (1 tablespoon)
 Black pepper
 Chile powder (1/2 teaspoon, ancho)
 Cumin (1/4 teaspoon) 
Cayenne pepper 
Lime juice (3 tablespoons, freshly squeezed) 
Red onion (1/2, sliced)
 Basil leaves (2 tablespoons)
 Smoked paprika (1 teaspoon)
 Agave nectar (1 teaspoon)
 Coriander (1/4 teaspoon)
 Jumbo shrimp (90g, deveined and without shell)
 Lettuce (8 leaves) 
Tomatoes (2, sliced) 

Directions :
  1.  Put oil and basil into a processor or blender and pulse until smooth. Add black pepper and lime juice, mx together and put aside until needed.
  2.  Heat grill.
  3.  Combine chili powder, cumin, cayenne pepper, paprika, sugar and coriander in a small bowl.
  4.  Coat shrimp with cooking spray and spice blend and put aside; prepare orzo as directed on package, run under cold water and drain.
  5.  Pour lime juice over orzo.
  6.  Grill shrimp for 4 minutes until slightly charred. 
  7. Place lettuce on a place and top with orzo, onion and tomato and drizzle with basil blend.
  8.  Add shrimp and serve.
