Ingredients :
Orzo pasta (150g)
Olive oil (1 tablespoon)
Black pepper
Chile powder (1/2 teaspoon, ancho)
Cumin (1/4 teaspoon)
Cayenne pepper
Lime juice (3 tablespoons, freshly squeezed)
Red onion (1/2, sliced)
Basil leaves (2 tablespoons)
Smoked paprika (1 teaspoon)
Agave nectar (1 teaspoon)
Coriander (1/4 teaspoon)
Jumbo shrimp (90g, deveined and without shell)
Lettuce (8 leaves)
Tomatoes (2, sliced)
Directions :
- Put oil and basil into a processor or blender and pulse until smooth. Add black pepper and lime juice, mx together and put aside until needed.
- Heat grill.
- Combine chili powder, cumin, cayenne pepper, paprika, sugar and coriander in a small bowl.
- Coat shrimp with cooking spray and spice blend and put aside; prepare orzo as directed on package, run under cold water and drain.
- Pour lime juice over orzo.
- Grill shrimp for 4 minutes until slightly charred.
- Place lettuce on a place and top with orzo, onion and tomato and drizzle with basil blend.
- Add shrimp and serve.
