Ingredients :
340 g quinoa
1000 ml almond milk
2 teaspoons stevia
70 g chopped almonds
1/2 teaspoon ground nutmeg
1 teaspoon cardamom powder
2 teaspoons freshly shredded ginger
1/2 teaspoon salt
Directions:
- Place some almond milk in a large vessel, add nutmeg powder, cardamom powder and bring it to a boil.
- Add the quinoa; let it cook for about 12-15 minutes with the lid covered. Ensure that the quinoa is fully cooked.
- Now throw in the shredded ginger, salt, vanilla essence, and let it simmer for about 7-8 minutes.
- Once it cools down slightly, refrigerate this porridge for at least an hour before serving.
- Heat a saucepan and slightly toast the chopped almonds on low heat.
- Drizzle some over the quinoa porridge.
- Enjoy!
