Cucumber Noodles with Strawberries

 Ingredients
1 Medium to Large Cucumber – Spiraled
 8 Medium Sized Strawberries – Removed Tops, Quartered
 2 Tbsp. of Balsamic Vinegar
 1 1/3 Tbsp. of Extra Virgin Olive Oil
 1 Tbsp. of Dijon Mustard
 Dash of Sea
 Salt Dash of Pepper
 1 Lemon
Directions: 

  1. Spiral the cucumber. Put them in a bowl on top of paper towels.
  2.  Use a food processor and puree the strawberries, olive oil, balsamic, mustard, and the spices.
  3.  Remove the paper towel from the bottom of the cucumber bowl.
  4.  Cut the lemon in half. Add the juice from one of the halves into the bowl.
  5.  Toss it well. 
  6. Plate the cucumber noodles into bowls. Add a few tablespoons of the vinaigrette to the top and garnish it with lemon slices.
