Ingredients:
1 Medium to Large Cucumber – Spiraled
8 Medium Sized Strawberries – Removed Tops, Quartered
2 Tbsp. of Balsamic Vinegar
1 1/3 Tbsp. of Extra Virgin Olive Oil
1 Tbsp. of Dijon Mustard
Dash of Sea
Salt Dash of Pepper
1 Lemon
Directions:
- Spiral the cucumber. Put them in a bowl on top of paper towels.
- Use a food processor and puree the strawberries, olive oil, balsamic, mustard, and the spices.
- Remove the paper towel from the bottom of the cucumber bowl.
- Cut the lemon in half. Add the juice from one of the halves into the bowl.
- Toss it well.
- Plate the cucumber noodles into bowls. Add a few tablespoons of the vinaigrette to the top and garnish it with lemon slices.
