Beef in Red Curry

Ingredients :

 1kg Beef Stew Meat 
200g finely chopped Onion 
4 Garlic cloves, minced 
200ml Beef Broth 
3 tablespoons Red Curry Paste 
2 tablespoons Fish Sauce 
2 tablespoons fresh Lime Juice 
400ml Coconut Milk 
2 tbsp. Coconut Oil 
1 Jalapeño pepper, minced
 Fresh Thai Basil Leaves


    Directions :
    1.  In a skillet, brown beef in coconut oil. Move to slow cooker set on low. 
    2. Add the red curry paste and fish sauce. 
    3. Sauté the onions until translucent, add garlic and minced jalapeño. 
    4. Cook for an additional minute, add to slow-cooker. Add the broth, coconut milk, and lime juice. 
    5. Cook for at least 6 hours. 
    6. Serve garnished with Thai basil.
