Ingredients :
1kg Beef Stew Meat
200g finely chopped Onion
4 Garlic cloves, minced
200ml Beef Broth
3 tablespoons Red Curry Paste
2 tablespoons Fish Sauce
2 tablespoons fresh Lime Juice
400ml Coconut Milk
2 tbsp. Coconut Oil
1 Jalapeño pepper, minced
Fresh Thai Basil Leaves
Directions :
- In a skillet, brown beef in coconut oil. Move to slow cooker set on low.
- Add the red curry paste and fish sauce.
- Sauté the onions until translucent, add garlic and minced jalapeño.
- Cook for an additional minute, add to slow-cooker. Add the broth, coconut milk, and lime juice.
- Cook for at least 6 hours.
- Serve garnished with Thai basil.
