Cheesy Pulled Brisket Burgers

(Prep Time: 30 min | Cooking Time: 3 h 45 min | Servings 8 to 10)
 Ingredients
10 burger buns 
3 ½ pounds beef brisket 
12 ounces of stout beer 
4 cups of beef stock 
8 ounces of sharp cheddar cheese, grated 
4 ounces of pimientos peppers, finely chopped 
4 ounces of white cheddar cheese, grated 
2 tomatoes, roughly chopped
 2 stalks of celery, finely chopped
 1 carrot, roughly chopped 
1 yellow onion, roughly chopped 
¾ cup of mayonnaise 
½ cup of bourbon 
¼ cup of red hot pepper paste
 ¼ cup of soy sauce 
¼ cup of brown sugar 
2 tablespoons of Parmesan cheese, grated
 1 ½ tablespoons of vegetable oil 
1 tablespoon of balsamic vinegar 
½ teaspoon of Worcestershire sauce 
¼ teaspoon of paprika
 2 cloves of garlic, minced 
Salt
 Directions: 

  1. Preheat the oven on 325 F.
  2.  Rub the beef brisket with paprika, some salt and pepper then refrigerate it for 1 h. 
  3. Heat the oil in a large heatproof pot the brown in it the brisket for 2 min on each side then set it aside. 
  4. Sauté the onion with garlic in the same pot for 2 min then add in the carrot with celery and tomato. 
  5. Cook the veggies for 6 min then add in the beer stout with bourbon, balsamic vinegar, soy sauce and brown sugar, stock, a pinch of salt and pepper then bring them to a boil.
  6.  Add the brisket back and cover the pot then place it in the oven (place in an oven proof pot if not already using one) and bake it for 3 h 30 min.
  7.  Combine the Parmesan cheese with cheddar cheeses, Worcestershire sauce, pimientos pepper and pepper paste, a pinch of salt and pepper to make the cheese sauce.
  8.  Pour the cheese sauce into a container and refrigerate it. 
  9. Once the time is up, drain the roast and pull it by using a fork. 
  10. Place the pulled pork in the burger buns and top it with the cheese sauce then serve them and enjoy.
