Ingredients :
1500g Pork Butt Roast
2 tbsp fresh Ginger, grated
1 teaspoon dried Ginger
5 cloves Garlic, minced
1 tbsp. Tamari
1 tbsp. Apple Cider Vinegar
250ml Coconut Milk
100 Onion, diced
2 tbsp. Lemongrass, minced
2 tbsp. Lemon Juice
1/2 teaspoon Lemon Zest
3 tbsp. Coconut Oil
Directions :
- Melt coconut oil in slow-cooker on high. Add onion, garlic, and grated ginger to the oil and stir to combine. Heat for 10 minutes.
- Add pork, and all other ingredients to the slow-cooker. Cook for 6 hours.
