Apricot and Mustard Chicken Sandwiches

Ingredients 
100g of Onion – Finely Chopped
 2 Cloves of Garlic – Minced
 1 Tbsp. of Oil 250g of Shredded Chicken
 3 Tbsp. of Spicy Brown Mustard
 3 Tbsp. of Apricot Preserves – Low Sugar
 1 Tbsp. of Cider Vinegar 
1 Tbsp. of Bourbon 
¼ tsp. of Cayenne Pepper
 4 Whole Wheat Buns – Split, Toasted
 4 Red Onion Slices – Thin 

Directions:
 In a large pan, cook the garlic and the onions in the oil on medium heat for 4 minutes. Stir in the mustard, chicken, apricot preserves, bourbon, vinegar, and the cayenne pepper. Cook it for 5 minutes. Spoon it on the buns.
