Pad Thai Styled Zucchini Noodles

 Ingredients:
 1 Medium Sized Zucchini - Spiraled 
2 Large Sized Carrots – Spiraled
 1 Medium Red Pepper – Sliced Thin 
100 g of Red Cabbage – Sliced Thin 
120 g of Edamame – Frozen, Thawed
 3 Green Onions – Sliced Thin 
1 Tbsp. of Hemp Seeds 
1 tsp. of Sesame Seeds

Dressing Ingredients: 
1 Clove of Garlic 
60 g of Almond Butter 
2 Tbsp. of Lime Juice 
2 Tbsp. of Tamari 
2 Tbsp. of Water 
2 ½ tsp. of Maple Syrup 
½ Tbsp. of Sesame Oil – Toasted 
1 tsp. of Ginger – Grated
Directions: 
  1. Prep your vegetables.
  2.  Add all of the vegetables into a large mixing bowl.
  3.  Toss it with clean hands.
  4.  Prepare the dressing by blending all of the dressing ingredients together. Allow it to sit until it thickens.
  5.  Top the bowls with the edamame, then the green onions, and then the seeds. Pour the dressing on the top.
